Re: Plan Review – Caribou Coffee
Dear applicant,
Thank you for providing the plans for review for Caribou Coffee. Please, share with corresponding parties involved
in this process. I am glad to approve your plans as it relates to Tarrant County requirements and federal and state
health codes, with the following reminders:
1. There shall be no direct connection between the sewage system and any drains originating from
equipment in which food or utensils are placed. Such fixtures shall be drained through an indirect
waste with a minimum one-inch air gap, where applicable.
2. The kitchen shall have soap and paper towels with dispensers before the final/opening inspection.
Also, sanitizer and test strips.
3. Walls, floors (all areas) & ceiling must be smooth and easily cleanable and nonabsorbent in kitchen,
ware wash, restroom and mop sink areas.
4. Vacuum breakers and backflow preventers provided as needed on any equipment directly connected to
water supply including mop sink and 3 compartments.
5. Ensure city jurisdiction sign off and approval of required grease trap/interceptor system.
6. Ensure that that all handwash sinks for staff are conveniently available and have 100-degree Fahrenheit
minimum hot water with soap, paper towels and the 3 compartments have 110 degrees water.
7. 3 compartments will have drain boards on each side.
8. Ensure adequate floor drains are present as needed.
Please, contact us at least 7 days before construction is completed for a final inspection before opening. Before any
alterations are made to the submitted and approved plans, the plan reviewer must be contacted, and approval must be
